PARADISE COOKIES
A true tropical delight! These soft cookies are filled with pineapple, macadamia nuts and coconut.
PREPARATION TIME: 45 MINUTES
BAKING TIME: 12 MINUTES
MAKES: 3 DOZEN COOKIES
Ingredients
- 3/4 cup sugar
- 1/2 cup butter softened
- 1 8-ounce can crushed pineapple in juice, well-drained
- 1 teaspoon vanilla
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1 3.25-ounce jar (2/3 cup) macadamia nuts, chopped
- 1/2 cup flaked coconut
Instructions
- Heat oven to 350°. Combine sugar and butter in large mixer bowl. Beat at medium speed, scraping bowl often, until creamy (1 to 2 minutes). Add pineapple and vanilla; continue beating until well mixed (1 minute). Reduce speed to low; add flour and baking powder. Beat until well mixed (2 to 3 minutes). Stir in nuts and 1/4 cup coconut by hand.
- Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets. Sprinkle with remaining coconut. Bake for 10 to 1 5 minutes or until set.
